The Summer Fancy Food Show has always been a window into what's next. This year's event made one thing clear: consumers aren't just looking for new products. They're looking for foods and beverages that deliver more value, more excitement, and more functionality in everyday eating occasions.
The Chex Products and Category Management team spent the show identifying emerging trends, discovering innovative brands, and evaluating opportunities that could help our retail and supplier partners stay ahead of consumer demand. From global flavor exploration to protein-packed pantry staples, several themes consistently surfaced across categories.
1. Convenience Is Growing Up: "In An Instant"
Consumers continue to crave convenience, but with higher expectations. The latest generation of quick-preparation foods is moving beyond inexpensive, highly processed solutions and toward products that deliver quality, flavor, and authenticity with minimal effort.
Across the show floor, we saw a surge in elevated instant offerings, including globally inspired noodle cups, ready-to-prepare soups, and innovative pantry staples that only require water or a few simple preparation steps. These products provide speed without sacrificing the culinary experience.
For retailers, this trend creates opportunities to attract busy shoppers looking for meal solutions that feel both convenient and premium.
2. Global Flavors Become Everyday Staples
One of the most exciting trends we observed was what we call "The Promiscuous Palate". A growing consumer willingness to explore flavors and ingredients from around the world. Rather than being limited to specialty occasions, international flavors are increasingly becoming everyday pantry essentials.
Vietnamese seasonings, West African ingredients, Korean flavor profiles, Caribbean influences, and Mexican-inspired condiments were featured prominently throughout the show. Consumers are demonstrating greater confidence in experimenting with unfamiliar cuisines and incorporating them into daily cooking routines.
As this trend continues to evolve, retailers have opportunities to expand assortments that encourage culinary exploration while remaining accessible and approachable.
3. Protein Has Moved Beyond Bars and Powders
Protein remains one of the strongest drivers of innovation across food categories, but the way brands are delivering protein is rapidly changing.
The show highlighted a movement toward "Protein Maximalism,"Â where consumers seek nutrient density throughout the day, not just through traditional protein supplements. We saw significant activity around electrolyte-enhanced drinks, lower-caffeine energy alternatives, reduced-sugar beverages, and sophisticated non-alcoholic wine and spirit options. What stood out wasn't simply the number of products, but the emphasis on delivering a full-flavor experience that rivals traditional offerings.
Consumers increasingly expect their beverages to provide benefits beyond hydration, whether that's energy, focus, wellness support, or moderation-focused alternatives.
6. Dates Are Emerging as a Power Ingredient
Few ingredients appeared as frequently across categories as dates.
Brands are leveraging dates as a natural source of sweetness in snacks, confections, beverages, and pantry items. Their versatility aligns with consumer demand for recognizable ingredients while helping manufacturers reduce reliance on refined sweeteners.
As consumers continue to prioritize products that balance indulgence and better-for-you attributes, expect dates to remain an increasingly important ingredient in product development pipelines.

While the six trends above dominated the show, two broader themes also emerged.
First, consumers are actively seeking everyday discovery—products that bring excitement to routine shopping trips through new flavors, formats, and experiences.
Second, brands are increasingly focused on speed to shelf, developing products that can quickly capitalize on emerging consumer interests and rapidly growing categories.
